    As you may know… I love pie. But sometimes, you just can’t have pie.  You may lack the proper silverware or you’re possibly on the train, where you would like to avoid death stares, as the point of everyone’s envy. Sometimes, you need to adjust to something more.. say “on the go”.

It’s beyond me.

These are so. easy. Much much much easier than making a pie.

I adapted the original recipe to taste more like an apple pie, rather than an apple cake. By adding sugar to the apple slices, it draws out the juice creating a delicious syrup; the cake batter, meanwhile, is a slightly salty, buttery concoction, reminiscent of my favorite pie crusts. Also, I definitely love the pecans in this, but opt out of the nuts if you wish/if you’re lame. 🙂

 Once baked, let these sit for at least 30 minutes to solidify. Otherwise, you’ll have a bit of a crumbly mess. Trust me, I know. (Do as I say, not as I do.) Afterwards, eat it ALL. Eat it all, really really fast 🙂 And digest — best eaten day 1. Here they are…

Buttery Apple Pie Squares

Ingredients
2 cup sifted all-purpose flour

1 teaspoon baking powder
1/2 (I did 2/3) teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter or margarine, melted
2 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/3 cup packed brown sugar
1/2 cup white sugar
1 1/2 cup chopped apple
1 cup coarsely chopped pecans
2 tablespoons white sugar
2 teaspoons ground cinnamon

Preheat oven to 350 degrees F (175 degrees C). Grease a 9×9 inch pan. Sift together flour, baking powder, salt, and 1/2 tsp cinnamon; set aside.

In another bowl, mix chopped apple, 1/2 cup white & 1/3 cup brown sugar, and pecans

In a large bowl, stir together melted butter, egg and extracts. Add in the flour mixture, stirring until just combined.

Add in the apple mixture and mix until uniformly combined. Spread everything evenly into the prepared pan.

Sprinkle remaining sugar and cinnamon over the top of the bars.
Bake for 25 to 30 minutes in preheated oven; toothpick should come out clean. Cool in the pan, and cut into squares.
